🫚🧄Stir-Fried Bok Choy with Garlic and Ginger

  • 1 lb. (450g) baby Bok choy

  • 2 cloves garlic, minced

  • 1-inch piece of fresh ginger, minced

  • 2 tablespoons coconut aminos (You can use low sodium soy sauce instead)

  • 1 tablespoon sesame oil

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon cornstarch (optional)

  • Salt and pepper to taste

  • Sesame seeds for garnish (optional)


Rinse the Bok choy under cold water to remove any dirt or grit. Cut off the bottom ends of the Bok choy and separate the leaves.

Make the sauce - in a small bowl, mix together coconut aminos, sesame oil, and cornstarch (if using). Set aside.

Heat the extra virgin olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger to the skillet and sauté for 1-2 minutes until fragrant. Add the Bok choy to the skillet and stir-fry for 2-3 minutes until the leaves start to wilt and the stems are tender-crisp.

Pour the sauce over the Bok choy and toss to coat evenly. Cook for an additional 1-2 minutes until the sauce thickens slightly and coats the Bok choy.

Transfer the stir-fried Bok choy to a serving dish and season with salt and pepper to taste. Garnish with sesame seeds if desired.

Serve hot as a side dish or over brown rice as a main course.
