Moroccan Inspired Chicken Recipe 🫚

Moroccan chicken recipe ingredients


2 tablespoons extra virgin olive oil

1 teaspoon ground paprika

1 teaspoon ground cumin

1 teaspoon ground coriander

1 cinnamon stick

1-inch fresh ginger, peeled and grated

1 medium red onion, chopped

1 28oz low sodium diced tomatoes with juice, organic if possible

1 15.5 oz can Garbanzo beans, (Chick peas) drained

1.5-pound chicken breast

1 cup low sodium vegetable broth, organic if possible

Salt and pepper to taste


Add Extra Virgin Olive to a pan and set on low to medium heat. Add ground spices, fresh grated ginger, cinnamon stick, salt and pepper. Sauté for about 4-5 minutes for the flavors to blend.

Then add the chicken breasts, chopped onions and the drained chick peas. Stir well and cook for about 2-3 minutes until chicken is browned on both sides.

Add can of diced tomatoes with the juice and 1 cup of vegetable broth. Turn heat to high until boiling, then immediately turn heat to low, add lid to pan and simmer for 20 minutes. Remove lid after 10 minutes, stir, then put lid back on and simmer for another 10 minutes.

Serve over brown rice, quinoa or couscous
