Chocolate Oat & Coconut Cookies

  • 1/2 cup rolled oats

  • 1 cup shredded unsweetened coconut

  • 1 cup dates

  • 1 tablespoon peanut butter

  • 1 tablespoon pumpkin purée

  • Melted unsweetened chocolate chips 


  • Lightly toast oats and coconut on a pan until light brown

  • Then blend all ingredients in a food processor (except the chocolate chips) until a sticky batter forms. If the batter is too crumbly add another 1/2 tablespoon of pumpkin purée

  • Divide batter into equal portions and form into a flat cookie

  • Use a chopstick to form a hole in the middle of each cookie

  • Place cookies in the freezer while you melt the chocolate chips

  • Dip bottom of each cookie in the melted chocolate and freeze upside down until the chocolate hardens

  • Then drizzle the rest of the melted chocolate on top of each cookie
