Homemade Muffins with a Veggie Twist! 🥕

Packed with nutritious goodness like carrots, and zucchini, our muffins are a delicious way to sneak in those extra veggies. Ingredients:

2 cups almond flour 

1 cup rolled oats 

2 teaspoons cinnamon 

1/2 teaspoon ground nutmeg 

1 teaspoon baking soda 

1/2 teaspoon Himalayan salt 

3 eggs, beaten 

1 cup shredded zucchini 

1 cup shredded carrots 

1/2 cup unsweetened apple sauce 

1/2 cup pure maple syrup 

1 teaspoon pure vanilla extract 


Direction:

Preheat oven to 350 degrees.

Beat the eggs together with a fork in a large bowl, and then add all the remaining ingredients. Mix together well.  

Spoon batter into a 12 cup muffin pan filling each cup to the top.

Bake for 25-30 minutes in the pre-heated oven.

Bake until muffins are slightly browned on top and a toothpick inserted in the center of a muffin comes out clean.
