Healthy Creamy Versatile Veggie Salad 🥬

Looking for a delicious way to get your veggies in? Say hello to our creamy veggie salad!

Packed with nutrients and bursting with flavor, it's perfect as is, or on an open faced sandwich, or with a piece of grilled chicken or salmon.

You can mix and match your favorite veggies and spices. The Greek yogurt dressing adds an extra creamy goodness and protein.

Not only does it taste amazing, it's refreshing and have essential vitamins, fiber, and antioxidants to keep you feeling energized and satisfied.

1 cup tightly packed lettuce (I used spring mix)

1/2 cup chick peas (From a can, drained and rinsed)

3-4 grape tomatoes

1/4 cup red onion, diced

1-2 tablespoons sun-dried tomatoes (I use sun-dried tomatoes from a glass jar in olive oil)

1-2 tablespoon fresh parsley

1/3 cup plain Greek Yogurt

1/2 tablespoon Dijon Mustard

1 teaspoon fresh lemon juice

1 teaspoon oregano

Pink Himalayan salt and black pepper to taste

(This is such a versatile recipe. You can add olives, curry or Cajun seasoning, or any vegetable you already have on hand)


Chop lettuce, chick peas, tomatoes, onion, sun-dried tomatoes and parsley. You can chop it finely or rough depending on your preference.

Add Greek Yogurt, mustard, lemon juice and spices and mix well.

You can eat this salad as is, top a slice of toasted Ezekiel bread with 1/3 of the salad or top a piece of grilled chicken or salmon with a /13 of the salad for a refreshing lunch or dinner.
