  • 1.5 pound of chicken breast cut into small pieces

  • 2 tablespoons curry powder

  • 1 cup sun dried tomatoes in oil, drained

  • 1 tablespoon minced garlic

  • 1 cup uncooked orzo

  • 2 1/2 cup low sodium chicken broth

  • 1/2- 3/4 cup coconut milk

  • 2 big handfuls of fresh spinach

  • Couple of sprays of pure avocado oil

  • Salt and pepper to taste 



  • Spray pan with pure avocado oil and add chicken pieces, curry powder, salt and pepper.

  • Cook over medium heat for about 3-4 minutes

  • Add sun dried tomatoes, minced garlic and cook for another couple of minutes

  • Add orzo, chicken broth and coconut milk. Mix well, cover and simmer for about 10 minutes. Remove cover once or twice to stir

  • After 10 minutes remove cover and add the fresh spinach, simmer for another 5 minutes until spinach is wilted

  • Remove from heat and serve immediately
