Chicken Pesto Caprese - A Perfect Harmony of Flavors!

Indulge in the delightful combination of juicy grilled chicken, fresh mozzarella, ripe grape tomatoes, and aromatic basil pesto! This Chicken Pesto Caprese is not only a feast for your taste buds but also a treat for your eyes. Perfect for any meal, whether you're dining solo or sharing with loved ones.


  • 2 large boneless skinless chicken breasts, even in size. Approximately 1.5 pounds total

  • 6 tablespoons fresh pesto. (You can also use store bought)

  • 6 slices of fresh mozzarella cheese, approximately ¼-inch slices

  • 3-4 grape tomatoes, sliced in half, lengthwise

  • Fresh basil leaves for garnish, if desired

  • Himalayan Salt and pepper to taste


1.    Preheat oven to 400 degrees Fahrenheit

2.    Lightly spray a baking dish with pure avocado oil (You can also use olive oil)

3.    Pat the chicken breast dry using a paper towel

4.    Cut into each chicken breast crosswise but not all the way through. Make 3-4 slits in each breast that will fit your caprese fillings

6.    Season lightly with Himalayan salt and pepper and add 3 tablespoons of pesto on each chicken breast.

7.    Rub the pesto on the chicken breasts and into the slits, then transfer your chicken to your prepared baking dish in a single layer, cut side up.

8.    Insert into each slit of your chicken one slice of mozzarella cheese and one half grape tomato

9.    Bake for 35-40 minutes, or until the chicken has reached an internal temperature of 165 degrees Fahrenheit

10.   Garnish with fresh basil if desired
